2011's Week #13 Winner: Brandon's All Mighty Ribs

Brandon's All Mighty Ribs
Sauce:
2 cups ketchup
3 tablespoons butter
1/2 cup apple cider
1 teaspoon apple cider vinegar
1 tablespoon honey
1/2 cup of your favorite dark beer
2 1/2 tablespoons soy sauce

Combine the ingredients in a saucepan. Gradually bring the sauce to a simmer over medium low heat and continue to simmer until thick about 8 to 10 minutes. Let cool to room temperature.

Rib Rub:
2 tablespoons sea salt or kosher just heavy grain
2 tablespoons brown sugar
2 tablespoons cinnamon
1 tablespoon freshly ground black pepper
2 teaspoons brown mustard to make it stick really good
2 teaspoons garlic powder
2 teaspoons chili powder

Combine ingredients in bowl, rub ribs and let set for at least 4 hours prior to cooking. To cook there are two ways: one is in the oven covered in foil and put half of your sauce in for 4 hours at 300 degrees or my favorite is grilled or smoked. If you are grilling set up, grill for indirect grilling. Put a tin pan in middle and set ribs over top. Line charcoal around and your heat should be around 250-275 for 6-7 hours. If you choose to smoke your ribs use apple wood and go to 225 heat for 9 hours. Remember to use sauce every hour to keep nice and moist. Enjoy!
