2012′s Week #2 Winner: Greg’s Spicy Bean Creole

Congratulations to Greg Schwarze from Carol Stream!

1 lb bacon
1 lb summer sausage
4 10z cans black beans
3 10z cans red beans
1 10z can diced tomatoes
1 bag frozen corn
3 green peppers
3 red peppers
3 jalapenos
cajun seasoning
2 cups water
Shredded cheese

1. Dice and fry bacon (keep soft)
2. Dice and brown sausage
3. Put undrained beans, can of tomatoes, and water into pot and heat
4. Put cooked meats into the pot and continue to heat. Once warm enough to eat, add diced peppers (minced jalapenos)
5. Add cajun seasoning to taste
6. Add frozen corn to pot and warm for 5 minutes
7. Serve with shredded cheese and bread.
