No Carb Bacon Crust Goat Cheese Alfredo Pizza

Do not preheat oven.

Ingredients:
12-14 slices medium to thick cut bacon
1/4 LB Italian sausage (optional)
25 slices pepperoni (optional)
1# shredded mozzarella cheese
Sauce:
1/4 C unsalted butter
1/2 C heavy whipping cream
3/4 C grated parmesan cheese
Salt and pepper to taste
Healthy pinch ground cayenne pepper
3 T creamy goat cheese

Directions:
1. Make bacon weave on top of a cooling rack inside of a rimmed baking pan. Line up 6-7 slices bacon tightly next to each other. Fold every other slice in half and lay a slice of bacon across against the fold line. Unfold the slices originally folded and fold the other slices back (over the perpendicular slice). Add another slice on the new fold line, flush against the first perpendicular slice. Repeat until you reach the end and then repeat the whole process on the other side. Place all in oven and set to 400 F for 20 minutes. About halfway through baking, pat top with paper towel. Then, take a second wire rack, place it on top of bacon and flip the bacon with the racks held together. Pat that side and put back in oven for the remaining 10 minutes.
2. While bacon weaves is cooking, brown chunks of sausage (optional) on stove until just fully cooked, using oil or butter. Pat dry and set aside.
3. This is also the time to make the Alfredo sauce. Melt butter in a saucepan and add heavy cream. Let simmer, stirring often, for 3 minutes, add the seasonings, and then gradually whisk in the parmesan, followed by the goat cheese. Let simmer in lowest heat for 5 minutes, stirring occasionally.
4. Once bacon is done, remove and pat the top, flip, and pat the other side. Baste the bacon weave with a healthy amount of the goat cheese Alfredo sauce and cover in a layer of mozzarella. Add sausage and pepperoni, if desired, and then pile high with more mozzarella. Return to oven for 10 more minutes, and then switch to broil until cheese starts to brown. Remove from oven and transfer to a cutting board and wait 5 minutes before cutting and serving. Or, put in fridge and throw on the grill the next morning for tailgate ecstasy!
