Congratulations to Week #11’s winner Nancy Clennon for her Grilled Stuffed Potato Skins!

12 small russet potatoes, rubbed with oil
8 ounces bulk sausage – sage flavor
1/2 yellow onion
2 cloves garlic, chopped
4 oz. cream cheese
1/2 package dry Hidden Valley Ranch Dressing mix
2 cups shredded cheddar

Bake potatoes for one hour at 375, until soft inside and crispy outside. Let cool, then cut in half and scrape out centers. Set skin shells aside. Cook sausage on medium heat for about ten minutes until cooked through. Transfer to a paper towel lined plate. Remove all but a scant 1/2 tsp. of sausage drippings from pan, and add onion and garlic. Cook until onion is soft and slightly browned. Turn off heat. Add the cream cheese and sausage to onion and let sit until cream cheese is softened. Then mix this with the reserved potato, Ranch Dressing mix, and 1 cup of shredded cheddar. Scoop mixture into potato skin shells and top with remaining cheddar. Chill, covered until tailgate. At tailgate, heat potato skins on grill for about 5-7 minutes until they are heated through and cheese is melted. I guarantee you will not have any left over!!!!!
