In the midst of preparing and packing all the paraphernalia that needs to be transported for a tailgating event, dessert is often left forgotten. Usually inspiration stops short at the easy option of cookies or brownies. But for those with a sweet tooth that crave something a little more fancy, nothing tickles the palate as much as dainty, pretty, one-bite cake pops. Easy to make, store and extremely portable, these soft “lollipops” add a finale with a gourmet touch to a satisfying barbecue, picnic or pot luck.

Cake Pops
Prep Time: 1 hour (plus 30 minutes for freezing)
Difficulty Level: Easy
Yield: 12-15 pops

Ingredients:

  • 1 9×9-inch chocolate cake (or your favorite flavor), bought or baked at home
  • Half-tin of chocolate frosting (or flavor of choice), adjust as needed
  • 12-15 cake pop sticks
  • 2 boxes high-quality white chocolate (optional)
  • Items as desired for optional decorative/gifting ideas (below)

Directions:

In a large mixing bowl, crumble the cake into fine crumbs. Add frosting gradually, mixing it in well, until the texture is pliable and doughy. Using a cookie scoop or mini ice-cream spoon, measure out equal portions of the batter and form into small, smooth balls in the palms of your hands.

Arrange the pops on a parchment-lined cookie sheet and press down lightly so as to flatten the bottoms for easy storage, handling and display. Freeze for 30 minutes or until firm to the touch. Remove from freezer and carefully insert the lollipop sticks into the center of each ball.

Melt the white chocolate (if using), in a double boiler or microwave. One at a time, dip and swirl each pop into the melted chocolate to cover evenly and thickly. Tap lightly to eliminate drips. If desired, roll each gently but quickly in topping of choice (see optional suggestions below) to decorate before chocolate cover hardens.

When done, store a single layer in an airtight box for carrying or display on a cake-stand.

Note 1: Any flavor of cake such as yellow, white, lemon, vanilla, strawberry, banana, fruit and spice, or red velvet is suitable.

Note 2: Crushed white or dark chocolate wafers, waffle ice-cream cones, graham cracker crusts, colored chocolate sprinkles or mixed nuts can be used as the final decorative layer of the cake pops.

Note 3: The white chocolate surface allows personalization by etching names of guests or favorite team members (ideal for a tailgating party), symbols or designs.

Note 4: Cake pops make great party favors or seasonal gifts. Wrap each in clear, colored or patterned cellophane gift bags and tie with coordinating string or ribbons.
